Grilled Turkey Burgers
1. 1 LB lean ground turkey
2. 2 eggs
3. 3 cloves garlic, chopped
4. 1 yellow onion, diced
5. ½ cup grated Parmesan cheese
6. ½ cup panko bread crumbs
7. ¼ cup worcestershire sauce
8. ¼ cup olive oil
9. ¼ cup chopped fresh parsley
10. 6 kaiser rolls, sliced
11. 1 stick unsalted butter
12. Lettuce, Tomato, red onion (sliced for sandwiches)
13. Sharp cheddar
Supplies needed:
1. Mixing bowl
2. Grill
Burgers:
Combine ground turkey with the onion, 2/3 of the garlic, breadcrumbs and parmesan cheese in large mixing bowl. In separate bowl, beat the eggs and mix with olive oil and worcestershire sauce. Combine liquid ingredients with turkey and mix with your hands until it is uniform throughout. Finally, add chopped parsley and gently incorporate.
To form burgers, break mixture into 6 even balls. Flatten them so each is roughly 1 ½ - 2 inches thick. It is important that all the burgers be about the same size, so that they cook evenly.
Grilling/assembling Burgers:
Preheat grill to 350 f. Place patties down and grill on each side for 5-6 minutes. The inside temperature of ground meat (both turkey and beef) should be no less than 160 f.
In small saucepan, melt a single stick of butter. Add the remaining chopped garlic and bring to a simmer. Strain out garlic, and using pastry brush or basting brush, lightly coat the inside of the rolls. Stick rolls face up in preheated 250 f oven for 3-4 minutes, or until slightly browned.
Slice a tomato, some romaine lettuce and a red onion and stack on top of completed burgers. Serve open-faced with a slice of sharp cheddar.
